INGREDIENTS
Cake Batter
- 🥚 3 eggs, room temperature
- 🧈 1/2 cup butter, softened
- 🍚 1 1/2 cups white sugar
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground nutmeg
- 🧂 1/4 teaspoon salt
Caramel Icing
- 1/2 cup packed brown sugar
- 3 tablespoons cream
- 🧈 1/4 cup butter
- 1 1/2 cups confectioners' sugar
STEPS
Preheat the oven to 350°F (175°C) and lightly grease 2 (9-inch) round cake pans.
Beat butter and white sugar with an electric mixer until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla.
Sift together the flour, baking powder, baking soda, nutmeg, and salt.
Alternate adding the flour mixture and buttermilk into the wet ingredients, starting and ending with the flour mixture. Mix just until combined.
Spread the batter evenly into the prepared pans.
Bake in the preheated oven for 25-30 minutes, until a toothpick inserted into the center comes out clean. Let cakes cool for 10 minutes, then remove from pans and let cool completely.
To make the caramel icing, heat brown sugar, cream, and butter in a saucepan over medium-high heat. Boil for 2 minutes, then remove from heat and let cool.
Stir in confectioners' sugar and beat until smooth. Adjust consistency with more cream or confectioners' sugar as needed, then spread icing over the cooled cake.
