INGRÉDIENTS
Vegetables
- 🥔 2 medium potatoes (300g)
- 🧅 1/4 red onion, sliced
- 20g pitted black olives
- 🌿 A pinch of parsley
Dairy
- 🧀 50g cream cheese
- 🥛 1 tbsp milk
Condiments
- 2 tbsp mayonnaise
- 🧂 1/4 tsp salt
- 🧂 A pinch of salt and pepper
ÉTAPES
Cut potatoes into bite-sized pieces and soak in water for 5 minutes. Drain and place in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 6 minutes. Mash roughly while hot and season with salt.
Slice the red onion thinly and soak in water for 10 minutes. Drain. Cut black olives into thirds.
In a bowl, mix the mashed potatoes with mayonnaise, milk, cream cheese, and a pinch of salt and pepper. Add the onions and olives, then mix gently.
Serve on a plate and garnish with parsley.
