INGREDIENTI
Wrapper
- 12 dumpling wrappers
Meat
- 80g ground pork
Vegetables
- 190g chopped cabbage
- 1/3 bunch chopped chives
- 20cm chopped green onion
Seasoning
- 🧂 Pinch of salt and pepper
- 1/2 tbsp soy sauce
- 1/2 tbsp sake
- 🧄 1/2 tsp grated garlic
- 1 tsp sesame oil
- 1 tsp potato starch
Cooking Liquid
- 💧 150cc water
- 1 tbsp flour
Dipping Sauce
- 1 tbsp miso
- 💧 1 tsp water
- 🍬 1 tsp sugar
- 1/2 tbsp vinegar
- 1/2 tsp chili paste
- 1 tbsp soy sauce
- 1 tbsp vinegar
PASSI
Chop cabbage, green onion, and chives finely. Sprinkle cabbage with a pinch of salt, let sit for 5 minutes, and squeeze out excess water.
Mix ground pork with sake, soy sauce, garlic, sesame oil, and potato starch until sticky. Add chopped vegetables and mix well.
Place 1/12 of the filling in the center of each dumpling wrapper. Wet the edges with water, fold in half, and pleat to seal.
Mix miso, water, sugar, vinegar, and chili paste in a bowl for dipping sauce.
Mix soy sauce and vinegar in another bowl for dipping sauce.
Combine flour and water in a bowl and mix well.
Heat a frying pan over medium heat. Arrange dumplings in the pan, pour the flour-water mixture around them, cover, and steam for 6 minutes.
Remove the lid, drizzle sesame oil around the dumplings, and fry until crispy. Flip onto a plate and serve with dipping sauces.
