Trim the stems off the shiso leaves and cut them in half lengthwise.

Lay half of the pork belly slices slightly overlapping to form a strip about 8cm wide. Sprinkle half of the salt and pepper, then place half of the shiso leaves evenly on top. Roll tightly from one end. Repeat for the second roll and coat with potato starch.

Heat salad oil in a frying pan over medium heat. Place the rolls seam-side down and cook for 1–2 minutes.

Rotate the rolls to brown evenly for 2–3 minutes. Add sake, cover with a lid, and steam for about 3 minutes until the pork is fully cooked.

Let the rolls cool slightly, slice into bite-sized pieces, and serve on a plate.
