Remove seeds and pulp from the pumpkin, cut into bite-sized pieces, and peel. Slice 8 thin pieces for decoration and set aside.

Place the pumpkin and 1 tbsp water in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 4–5 minutes until soft.

Blend the softened pumpkin, soy milk, eggs, sugar, flour, and vanilla essence in a blender until smooth.

Strain the batter through a sieve into a baking mold. Place on a baking tray lined with parchment paper, add the decorative pumpkin slices on top, and bake in a preheated oven at 170°C for 40–45 minutes. Remove the decorative pumpkin slices after 10 minutes and continue baking the batter until a skewer comes out clean.

Let the cake cool, slice, and serve with whipped cream and the decorative pumpkin slices.
