INGREDIENTS
Dry Ingredients
- 4 cups all-purpose flour, or more as needed
- 🧂 2 teaspoons salt
Yeast
- 3 ¾ teaspoons fresh, compressed yeast
Wet Ingredients
- 💧 1 ¼ cups water, at room temperature
- 2 ½ tablespoons extra-virgin olive oil
STEPS
Preheat the oven to the lowest setting possible.
Combine flour and salt in a stand mixer bowl with a dough hook. Add yeast in small pieces and pour in water slowly. Mix to form a dough ball. Drizzle in olive oil and mix until incorporated.
Knead on low speed for 5 to 6 minutes, adding extra flour if needed. Remove dough, form into a ball, and score the top with an 'x.' Cover with a damp cloth.
Turn the oven off and place dough inside to rise for at least 1 hour or up to 8 hours.
Remove dough from the oven, reattach the stand mixer, punch down the dough, and knead for 5 more minutes.
Preheat the oven to 450°F (230°C) with a pizza stone or tray on the bottom rack.
Cut the dough into 4 equal pieces. Roll each into a ball, dust with flour if needed, cover with a damp cloth, and form each into a 9-inch circle.
Top each round with desired toppings and move to the preheated pizza stone. Lower temperature to 410°F (210°C) and bake for 10 to 12 minutes.
