    • 100g king oyster mushroom

    • 1 tbsp sake
    • 1/2 tbsp soy sauce
    • 1 tbsp oyster sauce

Cut the salmon into bite-sized pieces. Season with salt and pepper, then coat with flour.

Cut the roots off the komatsuna and slice into 4cm pieces. Slice the king oyster mushrooms thinly after halving them.

Heat half the sesame oil in a frying pan over medium heat. Cook the salmon, flipping occasionally, until fully cooked. Remove from the pan.

Wipe the pan lightly with a paper towel. Add the remaining sesame oil and heat over medium. Stir-fry the komatsuna and mushrooms until softened. Return the salmon to the pan, add the seasoning mixture, and stir until evenly coated.
