Fish
- 🐟 2 cleaned Pacific saury
Herbs
- 4 shiso leaves
Seafood
- 2 mentaiko roe
Citrus
- 🍋 1 sudachi citrus
Seasoning
- 🧂 1/2 tsp salt
Oil
- 1 tbsp salad oil
Alcohol
- 1 tbsp sake
ÉTAPES
Pat dry the Pacific saury and remove the bones by hand. Sprinkle with salt.
Line the inside of the fish with shiso leaves and stuff with mentaiko. Cut the fish in half.
Cut the sudachi citrus in half.
Heat salad oil in a frying pan over medium heat. Place the stuffed fish in the pan and cook until the surface is browned. Add sake, cover with a lid, and steam for 3 minutes over medium heat.
Plate the fish and serve with sudachi citrus on the side.
