- 1 bunch (150g) seri (Japanese parsley)
Seafood
- 1 piece mentaiko (spicy cod roe)
Seasoning
- 🧂 A pinch of salt
- 1/2 tsp mentsuyu (3x concentrated)

Trim the roots of the seri and cut into 3cm pieces. Place in a bowl, sprinkle with salt, massage gently, and let sit for 3 minutes. Squeeze out excess water.

Make a slit in the mentaiko and use a spoon to scrape out the roe.

In a bowl, combine the seri, mentaiko, and mentsuyu. Mix well.
