Main Ingredients
- 1 piece (140g) fried tofu
- 150g chicken thigh
- 1/2 pack king oyster mushroom
- 1/4 pack kaiware sprouts
Seasonings
- Potato starch as needed
- 2 tsp salad oil
- 1 tbsp sake
- 🍬 1 tsp sugar
- 2 tbsp mirin
- 2 tbsp soy sauce
- 1/2 tsp dashi powder
- 1/2 tsp grated ginger
- 💧 300ml water

Slice king oyster mushrooms diagonally. Cut kaiware sprouts in half and remove their roots. Cut fried tofu into bite-sized pieces.
Cut chicken into bite-sized pieces and coat evenly with potato starch.
Heat salad oil in a pot over medium heat. Place chicken skin-side down and cook until browned, then flip and push to the side.
Add fried tofu and cook until browned on all sides, flipping occasionally.
Add king oyster mushrooms and all seasonings. Bring to a boil, then reduce to low heat and simmer for 10 minutes. Serve with kaiware sprouts on top.
