- 🐟 1 piece (80g) mackerel
- 1/2 piece ginger
- 1.5 tbsp sake
- 🍬 2 tsp sugar
- 💧 1/2 cup water
- 1/2 tbsp red miso
Chicken and Cucumber Salad
- 🍗 15g chicken breast
- 1/2 tsp sake
- 🥒 25g cucumber
- 🧂 A pinch of salt
- 🥔 100g grated daikon
- 1/2 tsp vinegar
- 🍬 1/2 tsp sugar
- 🧂 1/2 mini spoon salt
Kenchin Soup
- 🥔 25g daikon
- 🥕 15g carrot
- 10g burdock root
- 15g taro
- 🍶 25g firm tofu
- 🧅 10g green onion
- 1/2 tsp oil
- 1 cup dashi broth
- 1/3 tsp soy sauce
- 🧂 1/2 mini spoon salt
- To taste chili powder
PASOS
Cook the sprouted rice according to package instructions.
Prepare the mackerel by simmering it with ginger, sake, sugar, water, and red miso until tender.
Steam the chicken breast and shred it. Mix with cucumber, grated daikon, and the vinegar-sugar-salt mixture.
Prepare the Kenchin soup by sautéing vegetables and tofu in oil, then simmering with dashi, soy sauce, and salt.
