BAHAN-BAHAN

- 🐟 4 sardines (480g)
- 2 umeboshi
- 2 slices ginger
- 💧 300ml water
- 3 tbsp vinegar
Seasoning
- 🍬 1 tbsp sugar
- 2 tbsp mirin
- 2 tbsp sake
- 🧂 1.5 tbsp soy sauce
- 💧 150ml water
LANGKAH
Remove scales from sardines using a knife, cut off the head and fins, and clean the insides under running water.
Place sardines, 300ml water, and vinegar in a pan. Heat over medium heat, cover with a drop lid, and simmer for 10 minutes. Drain the liquid.
Add umeboshi, ginger, and seasoning ingredients (sugar, mirin, sake, soy sauce, 150ml water) to the pan. Cover with a drop lid and simmer over low heat for 20 minutes.
Remove sardines, umeboshi, and ginger from the pan and plate them. Reduce the remaining sauce over medium heat until thickened, then pour over the sardines.
