- 🥩 7 pounds fresh pork butt roast
STEPS
Gather all ingredients.
If desired, soak the pork butt in a brine solution for at least 4 hours or overnight in the refrigerator.
Preheat an outdoor smoker to 200-225°F (95-110°C). Place a roasting rack in a drip pan.
Mix brown sugar, chili powder, and any additional seasonings in a bowl.
Rub the seasoning mixture liberally onto the pork butt.
Place the pork on the roasting rack in the drip pan and smoke it for 6 to 18 hours until the internal temperature of the meat reaches 145°F (63°C).
