Using a food grinder, grind together the green tomatoes, red peppers, green peppers, onions, apples, and cucumbers into a large food-safe container. Mix in 1 scant cup salt, and let stand overnight.

Bring the vinegar to a boil in a large kettle or stockpot. Place the spices into a cloth bag, and boil for about 15 minutes. Remove the spice bag, then add sugar and dissolve.

Add the ground vegetable mixture to the pot, bring back to a boil, and simmer over medium-low heat until the relish is soft and slightly darkened in color.

Sterilize pint canning jars and pack the relish into the jars, leaving a 1/4 inch space at the top. Remove air bubbles, wipe rims, and seal with lids and rings.

Place jars in a canning kettle, boil them for 5 minutes, then cool them until the lids are sealed tightly.
