- 150g ground pork
Vegetables
- 🍆 2 eggplants
- 🧅 10cm green onion
Cooking Oil
- 1/2 tbsp salad oil
Thickening Agent
- 1 tbsp potato starch
- 💧 2 tbsp water
Meat Seasoning
- 1 tbsp sake
- 🧂 1/4 tsp salt
- A pinch of pepper
- 1/3 tsp grated ginger
- 2 tbsp potato starch
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 1/2 tbsp soy sauce
SCHRITTE
Prepare the eggplants by cutting them in half lengthwise and scooping out the flesh. Soak the eggplants in water for 5 minutes and chop the scooped-out flesh. Mince the green onion.
Mix the ground pork, minced green onion, chopped eggplant flesh, and meat seasoning ingredients in a bowl until sticky. Divide into 4 portions.
Pat the eggplants dry and coat the inside with potato starch. Stuff each eggplant half with the meat mixture, pressing firmly to eliminate gaps.
Heat salad oil in a pan over medium heat. Place the stuffed eggplants meat-side down and cook until browned. Flip them over, add water, cover, and steam on low heat for 10 minutes.
Add the sauce ingredients to the pan and cook until the eggplants are glazed and shiny.
