INGREDIENTS
Meat
- 3 pounds flank steak
Marinade
- 🧂 ½ cup soy sauce
- ½ cup olive oil
- ⅓ cup white vinegar
- 🧄 4 cloves garlic, minced
- 🍋 2 limes, juiced
- 🧂 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon ground white pepper
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
Relish
- 🧅 1 white onion, chopped
- ½ cup chopped fresh cilantro
- 🍋 1 lime, juiced
Salsa
- 4 dried New Mexico chile pods
- 🍅 2 large tomatoes, chopped
- 🧅 1 white onion, quartered
- 🧄 4 cloves garlic, peeled
- 2 jalapeno peppers, chopped
- 🧂 1 pinch salt and black pepper
Tacos
- 1 (32 ounce) package corn tortillas
- 2 cups grated cotija cheese (Optional)
- 🍋 2 limes, cut into wedges
STEPS
Lay flank steak in a large glass baking dish.
Prepare the marinade by whisking soy sauce, olive oil, vinegar, garlic, lime juice, salt, black pepper, white pepper, garlic powder, chili powder, oregano, cumin, and paprika in a bowl. Pour over steak, ensuring both sides are covered. Cover with plastic wrap and refrigerate for 1 to 8 hours.
Make relish by combining onion, cilantro, and lime juice in a bowl. Set aside.
Toast chili pods in a skillet over medium-high heat for a few minutes, then soak them in water for 30 minutes.
Roast tomatoes, onion, garlic, and jalapeños on a baking sheet in a preheated oven at 450°F (230°C) for 20 minutes or until toasted.
Blend roasted vegetables with soaked chilies, salt, and pepper until smooth to make salsa.
Remove steak from the marinade, discard the excess marinade, and cut steak into cubes or strips. Cook in a large skillet over medium-high heat with vegetable oil until done.
Warm corn tortillas in a dry skillet for 1 minute on each side.
Assemble tacos by placing steak on tortillas, topping with relish and salsa, and sprinkling with cotija cheese. Garnish with lime wedges and serve.
