INGREDIENTS
Crust
- 1 cup all-purpose flour
- 1 cup oats
- 🧂 3/4 teaspoon salt
- 4 tablespoons avocado oil
- 5 tablespoons water
Filling
- 🥓 6 ounces bacon
- 6 ounces chorizo
- 1 tablespoon unsalted butter
- 1 small red bell pepper
- 1 cup hash browns
- 1 (4 ounce) can green chilies, drained
- 1 cup grated Cheddar cheese
- 🥚 6 large eggs
- 1/2 cup half-and-half
- 2 tablespoons sour cream
- 🧂 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
STEPS
Combine flour, oats, and salt in the bowl of a food processor and pulse to mix. Add avocado oil and water, pulsing until dough forms.
Press the dough into a 9-inch quiche pan or pie pan evenly. Refrigerate until ready to fill.
Preheat oven to 350°F (180°C).
Cook bacon in a skillet over medium-high heat until browned. Drain and crumble when cool.
Cook chorizo in the same skillet, breaking it into small clumps until browned. Drain and set aside.
Melt butter in the skillet, cook onions until translucent, then add bell peppers and cook until tender.
Add hash browns to the vegetables, cook briefly, then stir in green chilies, bacon, chorizo, and half the Cheddar cheese.
Whisk eggs with half-and-half, sour cream, salt, black pepper, and cayenne. Stir in the cooked vegetable-bacon mixture.
Pour the filling onto the crust placed in a baking sheet.
Bake for 35-55 minutes or until a knife inserted in the center comes out clean.
Sprinkle the remaining Cheddar cheese on the hot quiche, cool for 10 minutes, and cut into 8 servings.
