INGREDIENTS
Frosting
- 1 (14 ounce) can coconut cream
- 🍫 1 1/2 cups chocolate chips
- 🧂 Pinch of salt
Cake Batter
- 3/4 cup coconut oil, melted and cooled
- 1 3/4 cups coconut sugar
- 🥚 4 large eggs
- 1 tablespoon vanilla extract
- 1 tablespoon apple cider vinegar
- 🥛 1 cup Unsweetened Vanilla Almondmilk
- 3 cups Almond Flour
- 3/4 cup unsweetened cocoa powder
- 1/4 cup coconut flour
- 2 teaspoons baking soda
- 🧂 1/2 teaspoon salt
STEPS
Prepare the frosting: In a small pot, combine coconut cream, chocolate chips, and a pinch of salt over low heat. Whisk until melted, transfer to a bowl, cover with plastic wrap, and refrigerate for 6 hours or overnight.
Preheat the oven to 350°F (175°C). Line three round cake pans with parchment paper and spray with nonstick cooking spray.
Mix the wet ingredients: In a large bowl, blend melted and cooled coconut oil, coconut sugar, eggs, vanilla, and apple cider vinegar until smooth using an electric mixer. Add Unsweetened Vanilla Almondmilk and mix thoroughly.
Combine dry ingredients: In a separate bowl, whisk together Blue Diamond Almond Flour, cocoa powder, coconut flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients and mix until smooth.
Divide batter evenly between pans, smoothing the tops with a spatula, and bake for 20-30 minutes, rotating halfway through. Remove and cool for 15 minutes before transferring to the fridge to cool completely for 1 hour.
Prepare the frosting: Once hardened, beat the chocolate coconut cream mixture with an electric mixer until fluffy peaks form.
Layer and frost the cake: Spread 1/3 to 1/2 cup frosting between layers and frost the top and sides with the remaining frosting. Allow the cake to sit for at least an hour before serving.
