INGREDIENTS
Crust
- 🌾 2 cups all-purpose flour
- 🧂 ½ teaspoon salt
- ⅔ cup shortening, chilled
- 💧 6 tablespoons cold water
Filling
- 🧂 ½ cup white sugar
- 3 tablespoons cornstarch
- 2 cups fresh raspberries
- 1 ½ cups fresh blueberries
- 🍓 1 cup fresh strawberries, halved
STEPS
Combine flour and salt in a large bowl. Cut in cold shortening with knives or a pastry blender until the mixture resembles coarse crumbs. Gradually add water, 1 tablespoon at a time, tossing with a fork until pastry forms a ball. Divide into two balls, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Roll out one ball of dough into a 12-inch circle on a floured surface. Place it into a 9-inch pie plate and trim the edges. Refrigerate the pie plate with the crust.
In a large bowl, mix sugar and cornstarch. Add raspberries, blueberries, and strawberries. Gently toss and let stand for 15 minutes.
Preheat the oven to 375°F (190°C) and place a baking sheet in the oven to preheat.
Roll out the second dough ball for the top crust. Stir berry mixture and pour it into the prepared crust. Cover with the top crust, trim the edges, seal, and crimp. Cut vents in the top and cover the edges with foil to prevent over-browning.
Bake on the preheated baking sheet for 25 minutes. Remove the foil and bake for another 20 minutes or until the crust is golden and the filling is bubbly.
