INGREDIENTS
Protein
- π 4 skinless chicken thighs
Liquid
- 3 cups chicken stock
Vegetables
- π§ 1 onion, chopped
- π§ 3 cloves garlic, chopped
- π 4 ounces fresh mushrooms, sliced
- π 3 tomatoes, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, thinly sliced
Spices
- 1 teaspoon ground turmeric
Grain
- π 12 ounces uncooked white rice
Oil
- 1 tbsp olive oil (for sauteing)
STEPS
In a large pot, boil chicken pieces in chicken stock, adding onion and garlic to the stock before boiling. When chicken is cooked through, remove it from the stock and set aside.
Add turmeric to the stock, stir it in, and set the stock aside.
In a large skillet, heat olive oil. Add mushrooms and saute for 1 minute.
Add rice to the skillet, stir for 2 minutes, then pour in the prepared stock. Let it all simmer gently for 20 minutes.
While the rice simmers, peel and slice the tomatoes, then add them to the pilaf mixture.
Cut the cooked chicken into bite-size pieces and add them to the skillet along with the red, green, and yellow bell peppers.
Stir everything together and let it simmer over low heat, stirring occasionally, until all the liquid is absorbed and the rice turns fluffy and separate.
