INGRÉDIENTS

- 🍗 200g chicken cartilage (yagen)
Coating
- 2 tbsp potato starch
- 1 tbsp all-purpose flour
Oil
- Enough salad oil for frying
Seasoning
- 1/2 tbsp sake
- 1/2 tbsp soy sauce
- 🧄 1/2 tsp grated garlic
- 1/2 tsp grated ginger
- A pinch of black pepper
ÉTAPES
Place chicken cartilage and seasonings (sake, soy sauce, garlic, ginger, black pepper) into a plastic bag. Massage well, seal the bag, and let it marinate in the refrigerator for 10 minutes.
Add potato starch and all-purpose flour into the bag and coat the chicken cartilage evenly.
Heat salad oil in a frying pan to 170°C (about 1cm depth). Fry the coated cartilage until golden brown, turning occasionally.
