INGREDIENTS

  • Za'atar Spice Mix

    • 2 tablespoons dried thyme
    • 1 1/2 teaspoons marjoram
    • 1 tablespoon sumac
    • 1 tablespoon toasted sesame seeds
    • 1 tablespoon ground cumin
    • 1 teaspoon ground black pepper
    • 1/4 teaspoon cayenne pepper
  • Chicken Wings

    • 🐓 3 1/2 pounds whole chicken wings
    • 1 tablespoon kosher salt
    • 1/2 teaspoon garlic powder
    • 🥚 1 large egg white
    • 🍯 2 tablespoons honey
    • 🍋 1 tablespoon lemon juice
    • 2 tablespoons olive oil
    • 2 tablespoons chopped parsley (optional)
    • 2 teaspoons sumac (optional)

STEPS

1

Grind dried thyme and marjoram using a mortar and pestle or spice grinder. Place in a small bowl.

2

Add sumac, sesame seeds, cumin, black pepper, and cayenne pepper to the bowl. Stir thoroughly and store in an airtight container if not using immediately.

3

Cut whole chicken wings into flat and drum sections. Add them to a bowl with kosher salt and garlic powder, and mix thoroughly. Cover and refrigerate for at least 2 hours (up to 24 hours for more flavor).

4

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

5

Whisk egg white, honey, and lemon juice in a small bowl until foamy. Pour over the chicken wings and stir to coat.

6

Sprinkle prepared za’atar spice mix over wings and toss until evenly coated. Arrange the wings on the prepared baking sheet.

7

Bake in the oven for 20 minutes, then flip the wings.

8

Continue baking for another 20-30 minutes until the wings are browned and meat easily pulls off the bone.

9

Rest the wings for 5–10 minutes before serving. Drizzle with olive oil and garnish with parsley and additional sumac or za'atar, if desired.

💡 Double or triple the za’atar recipe as it works well on other dishes such as roasted vegetables or flatbreads. For an extra sticky and sweet version, drizzle more honey on the wings after baking.Serve with a yogurt-based or tahini dipping sauce for a Mediterranean touch.
