  • Preparation

    • 2 tbsp sake
    • 🧂 Pinch of salt

    • 🧂 1/5 tsp salt
    • Pinch of white pepper

Sprinkle the anglerfish with sake and salt, let sit for 30 minutes. Boil water in a pot, blanch the anglerfish until the surface turns white. Rinse under water and remove slime.

Pat the anglerfish dry with paper towels, season both sides with salt and white pepper, and coat evenly with flour.

Heat olive oil and garlic in a frying pan over low heat until fragrant. Add the anglerfish and cook over medium heat until both sides are golden brown.

Add white wine and simmer over low heat for 2–3 minutes. Add water, cherry tomatoes, green olives, and clams. Cover and steam over medium-low heat for 5–6 minutes.

Adjust seasoning with salt and white pepper. Serve on a plate and garnish with chopped Italian parsley.
