Cut the squid body into 1cm wide crosshatch cuts on both sides, then slice into 3cm wide pieces. Trim the tentacles to even lengths and divide into smaller portions. Cut the fins into bite-sized pieces. Coat the squid with potato starch.

Mix the tempura flour and water in a bowl to create the batter.

Heat 3cm of salad oil in a frying pan to 170°C. Dip the squid into the batter and fry for about 1 minute until the coating turns crispy.
