  • Chicken

    • 🍗 500g chicken thighs
  • Vegetables

    • 🧅 1 onion, minced
    • 🧄 1 clove garlic, minced
    • 1 piece ginger, minced
    • 2 chilies, sliced and deseeded
  • Oil

    • 2 tbsp salad oil
  • Chicken Marinade

    • 1/2 tbsp curry powder
    • 🥛 200g unsweetened yogurt
  • Curry Base

    • 1 tbsp curry powder
    • 1 tsp cumin powder
    • 🍅 1 can (400g) whole tomatoes
    • 💧 200cc water
    • 🧂 1 tsp salt
    • 1 tsp consomme
    • 🍬 1 tsp sugar

Mince the onion, garlic, and ginger. Slice the chilies and remove the seeds.

Cut the chicken into bite-sized pieces. Mix the chicken with the marinade ingredients in a bag and refrigerate for 10 minutes.

Heat salad oil in a pot. Add onion, garlic, ginger, and chilies. Sauté on low heat until the onion turns golden brown. Add curry powder and cumin powder, and stir until fragrant.

Add the remaining curry base ingredients. Crush the tomatoes in the can before adding. Bring to a boil, then add the marinated chicken and mix.

Cover and simmer on low heat for 20 minutes. Remove the lid, stir, and cook for another 5 minutes. Serve the chicken curry over rice.
