In a bowl, mix the beef slices with sake, mirin, sugar, and soy sauce. Massage well, cover with plastic wrap, and refrigerate for 1–2 hours.

Pat the beef dry with paper towels, sprinkle black pepper on both sides, and arrange on a baking tray lined with parchment paper.

Preheat the oven to 120°C and bake for 30 minutes. Pat dry again, flip the slices, and bake for another 30 minutes until the surface is dry.
