    • 2 tbsp sesame oil

Mix the cooked rice with soy sauce in a bowl using a cutting motion.

Spread half of the sesame oil (1 tbsp) in a tamagoyaki pan using a paper towel. Add half of the rice mixture and flatten it evenly.

Layer the melting cheese slices, torn shiso leaves, and spread the mentaiko evenly on top. Cover with the remaining rice mixture and flatten.

Cook over medium heat for about 10 minutes until the bottom is crispy. Remove from the pan.

Add the remaining sesame oil (1 tbsp) to the pan, spread it with a paper towel, and return the rice ball to cook the other side for another 10 minutes until crispy. Cut into bite-sized pieces.
