Bring water to a boil in a pot, add the chicken, stir briefly, then drain and pat dry.

Add the seasoning ingredients, burdock, maitake, and chicken to a pot. Cover with a drop lid and heat on medium. Once boiling, reduce to low heat and simmer for 15 minutes.

Remove the lid, increase the heat, and shake the pot to coat the ingredients with the sauce. Serve on a plate, garnish with green onion, and sprinkle sansho powder.
