    • 1 tbsp potato starch
  • Broth

    • 2 tbsp sake
    • 3 tbsp mirin
    • 🧂 1 tsp salt
    • 1 tsp chicken stock powder
    • 600ml water

Cut napa cabbage into 3cm widths, slice green onion diagonally into 1cm widths, halve shiitake mushrooms, mince green onion for meatballs, and grate ginger.

Mix ground chicken, minced green onion, 1/3 of grated ginger (10g), salt, and potato starch in a bowl until sticky. Divide into 10 portions.

Heat broth ingredients (sake, mirin, salt, chicken stock powder, water) in a pot until boiling. Shape each meatball and add to the pot. Cover and simmer on low heat for 5 minutes.

Add napa cabbage, green onion, and shiitake mushrooms to the pot. Cover and simmer for another 5 minutes. Remove the lid and top with the remaining grated ginger (20g).
