Cooking Oil
- Enough salad oil for frying
Chicken Soup Base
- 🍗 2 bone-in chicken thighs
- 🧅 1 green onion (green part)
- 🧄 1 clove garlic
- 4–5 slices of ginger
- 4 tbsp sake
- 7–8 cm square kombu
- 🧂 1 tbsp salt
- Enough water to cover chicken
Batter
- 150 ml chicken broth
- 100 g all-purpose flour
- 🥚 1 egg
Soup Sauce
- 1/2 tbsp doubanjiang
- 1 tbsp chili powder
- 2 cloves minced ginger
- 🧅 Generous amount of chopped green onion
- 1/2 tbsp soy sauce
- 1/2 tbsp miso
- 40 ml fried oil
- 2 cups chicken broth
ШАГИ
Place all chicken soup base ingredients in a pot and bring to a boil. Skim off scum and simmer for about 10 minutes. Transfer chicken and broth to a bowl and cool quickly. Cover with paper towels to prevent air exposure.
Mix all batter ingredients in a large bowl.
Coat the chicken with the batter and deep-fry at 200°C until crispy. Drain excess oil. Repeat for the second chicken thigh.
Divide doubanjiang, chili powder, minced ginger, and chopped green onion into two bowls. Pour hot fried oil over each bowl.
Add soy sauce, miso, and chicken broth to the bowls and mix. Dip the fried chicken into the soup sauce and enjoy.
