Cut the stems off the shiso leaves and slice them in half lengthwise. Make a slit in the middle of each chikuwa and stuff them evenly with shiso leaves and pizza cheese.

Place a slice of pork belly vertically, dust lightly with potato starch, and position the stuffed chikuwa at the bottom edge. Roll tightly to form a wrap. Repeat for all 5 chikuwa sticks and cut each into three equal lengths.

Heat salad oil in a frying pan over medium heat. Place the rolls seam-side down and cook while turning until the pork is fully cooked. Add the seasoning mixture (sake, mirin, sugar, soy sauce) and simmer until glossy.
