ИНГРЕДИЕНТЫ
Main Ingredients
- 🐟 200g cod fillets
- 100g shungiku (edible chrysanthemum)
- 100g burdock root
- 1 slice ginger
- 🧂 Pinch of salt
Simmering Sauce
- 4 tbsp sake
- 1 tbsp mirin
- 🍬 1 tbsp sugar
- 1 tbsp soy sauce
- 💧 200ml water
ШАГИ
Sprinkle salt on both sides of the cod fillets and let sit for 5 minutes. Pat dry with kitchen paper.
Cut shungiku into bite-sized pieces. Slice burdock root diagonally and soak in water to remove bitterness. Slice ginger thinly.
In a frying pan, combine the simmering sauce ingredients and heat over medium heat until boiling. Add cod, ginger, and burdock root. Simmer over low heat for 10 minutes, spooning sauce over the cod occasionally.
Remove cod, burdock root, and ginger from the pan and plate them. Reheat the pan and add shungiku, cooking until wilted. Plate the shungiku.
Heat the remaining sauce over medium heat until reduced by half. Pour the sauce over the cod before serving.
