    • 4 shishito peppers
  • Oil

    • 2 tsp salad oil
  • Seasoning

    • 1 tbsp sake
  • Sauce

    • 1/2 tbsp sake
    • 1/2 tbsp mirin
    • 🍬 1/2 tbsp sugar
    • 1/2 tbsp soy sauce

Cut the anago fillets into 4 equal pieces.

Heat salad oil in a pan over medium heat, add shishito peppers, and quickly sauté. Remove and set aside on a plate.

Place the anago skin-side down in the same pan, cook over medium heat, flipping occasionally until browned. Add sake, cover, and steam over low heat until the liquid evaporates.

Add the sauce ingredients (sake, mirin, sugar, soy sauce) to the pan. Simmer for 2 minutes, flip the anago, and simmer for another 2 minutes over low heat.

Serve the anago on the plate with the shishito peppers.
