Fish
- 🐟 2 fillets mackerel
Seasoning
- 🧂 Pinch of salt
- 2 tsp vegetable oil
Plum Miso
- 2 plums, pitted and mashed
- 2 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp miso

Make shallow cuts on the skin of the mackerel fillets, sprinkle both sides with salt, and let sit for 10 minutes. Pat dry with paper towels.
Pit the plums and mash them with a knife.
Mix the plum miso ingredients (plums, sake, mirin, sugar, miso) in a bowl.
Heat vegetable oil in a frying pan over medium heat. Place the mackerel skin-side down and cook until browned. Flip and cook on low heat for about 2.5 minutes until cooked through.
Drizzle the plum miso sauce over the mackerel and cook, ensuring the sauce coats the fish evenly. Serve on a plate and pour the remaining sauce from the pan over the mackerel.
