    • 20g dried kombu
  • Seasoning

    • 🧂 1/3 tsp salt
  • Liquid Seasoning

    • 💧 100cc water
    • 2 tbsp vinegar

Wipe the kombu with a damp kitchen paper to remove dirt. Mix water and vinegar in a tray, then soak the kombu for about 10 minutes until softened. Drain the kombu.

Place half of the kombu in the tray and sprinkle half of the salt evenly. Lay the horse mackerel fillet on top, then sprinkle the remaining salt. Cover with the remaining kombu. Wrap tightly with cling film and place a weight on top. Refrigerate for 2–3 hours.

Cut the fish into bite-sized pieces before serving.
