    • 🧂 60g sugar
    • 1 tbsp water
    • 1 tbsp hot water
  • Pudding Mixture

    • 🥛 300cc milk
    • 🥛 100cc heavy cream
    • 🧂 90g sugar
    • 🧀 100g cream cheese
    • 🥚 4 eggs, beaten
  • For Greasing

    • 🧈 3g unsalted butter

Bring cream cheese to room temperature and grease the mold lightly with unsalted butter.

Prepare caramel by heating sugar and water in a pan over medium heat until light brown. Add hot water and mix well. Pour into the mold and chill in the refrigerator for 20 minutes.

Heat milk, heavy cream, and half the sugar (45g) in a pan over medium heat, stirring until small bubbles form at the edges. Remove from heat.

Mix softened cream cheese with the remaining sugar (45g) in a bowl. Gradually add beaten eggs in three portions, mixing thoroughly each time. Slowly add the milk mixture while stirring, then strain and pour into the mold.

Place the mold on a damp cloth in a heatproof tray. Add hot water to the tray until it reaches 2cm up the sides of the mold. Bake at 160°C for 40–50 minutes. Cool and refrigerate for at least 2 hours before serving.
