Main Ingredients
- 🍆 1 medium eggplant, about 24cm
Seasoning
- 1 tbsp soy sauce
- 🧂 1 tbsp sugar
- 1 tbsp sake
- 1 tbsp mirin
- 💧 1 tbsp water
ШАГИ
Peel the eggplant and cut it in half. Place it in a bowl, cover with plastic wrap, and microwave for about 90 seconds.
Let the eggplant cool slightly, then make shallow cuts and spread it open.
Mix soy sauce, sugar, sake, mirin, and water in a 1:1:1:1:1 ratio to make the sauce. Adjust sugar to taste.
Heat oil in a pan and fry the eggplant on both sides until golden brown.
Pour the prepared sauce over the eggplant and simmer briefly until slightly reduced.
Serve the eggplant over rice, drizzling the remaining sauce on top.
