    • 🍠 150g sweet potato, sliced

    • 🍯 2 tsp honey
    • 2 tsp grain mustard
    • 🍋 2 tsp lemon juice

Slice sweet potato into 1cm thick pieces and soak in water for 5 minutes. Drain and microwave for 3 minutes at 600W.

Heat olive oil in a pan over medium heat. Add chicken and cook until the surface changes color. Add sweet potato and stir-fry briefly.

Add the lemon mustard sauce ingredients and stir-fry for 2-3 minutes until well coated.

Mix in chopped Italian parsley and serve.
