    • 🍄 1 pack (100g) maitake mushrooms
    • 🧅 1/2 stalk (82.5g) green onion
    • 30g mizuna greens
  • Seasoning

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1/2 tbsp sugar
    • 1 1/2 tbsp soy sauce
    • 💧 100ml water
  • Garnish

    • 🥚 1 soft-boiled egg

Cut the chicken into bite-sized pieces.

Separate maitake mushrooms into small clusters and slice the green onion diagonally into 7mm pieces.

Mix the seasoning ingredients (sake, mirin, sugar, soy sauce, water) in a microwave-safe container. Add the chicken and cover loosely with plastic wrap. Microwave at 600W for 2–3 minutes.

Flip the chicken pieces, add maitake mushrooms and green onion, cover loosely again, and microwave for another 4 minutes.

Serve in a bowl, topped with halved soft-boiled egg and mizuna greens.
