    • 🍗 1 piece (350g) chicken thigh
    • 2 tbsp sake
    • 🧂 1 tbsp sugar
    • 2 tbsp soy sauce
    • 2 tsp cornstarch
    • 1 tsp salad oil
  • Japanese Salad

    • 1/2 bag mizuna
    • 1 piece fried tofu
    • 🍅 4 cherry tomatoes
    • 2 tbsp vinegar
    • 1 tbsp soy sauce
    • 🧂 1 tsp sugar
    • 1 tbsp salad oil
    • 1/2 tsp yuzu pepper

Pierce the skin side of the chicken thigh with a fork and make 4 cuts on the underside. Mix the marinade ingredients (sake, sugar, soy sauce, cornstarch, salad oil) in a container.

Place the chicken skin-side down in the marinade and let it soak for 10 minutes. Cover loosely with plastic wrap and microwave at 600W for 3 minutes.

Flip the chicken, coat it with the marinade, and microwave at 600W for another 3 minutes. Let it rest under the wrap for 5 minutes before slicing into bite-sized pieces.

Cut the mizuna into 5cm pieces. Toast the fried tofu in a pan over low heat until crispy and golden on both sides, then cut into 1cm strips.

Mix the salad dressing ingredients (vinegar, soy sauce, sugar, salad oil, yuzu pepper) in a bowl. Add the mizuna and fried tofu, then toss to combine.

Plate the salad with cherry tomatoes and top with the sliced teriyaki chicken.
