    • 2 tsp flour

Slice the bamboo shoots: tips into 5mm slices and roots into 5cm matchsticks. Halve the shiso leaves lengthwise.

Mix mirin and miso in a bowl to create the sauce.

Heat 1 tsp salad oil in a pan over medium heat, stir-fry bamboo shoots for 3 minutes. Add butter and sauce, mix well, and cook for 1 minute. Let cool.

Place half a shiso leaf on a spring roll wrapper, add 1/8 of the filling, and roll tightly. Seal with the flour-water mixture. Repeat for 8 rolls.

Heat salad oil to 170°C in a pan, fry rolls seam-side down for 2 minutes per side until golden brown.
