Soak breadcrumbs in milk in a bowl until fully absorbed. Add ground meat, natto, natto sauce, salt, pepper, and grated ginger. Mix thoroughly.

Divide the mixture into two portions, shape into oval patties, and slightly indent the center.

Heat salad oil in a frying pan over medium heat. Add patties and cook until browned. Flip, cover with a lid, and cook on low heat for 7–8 minutes until fully cooked. Remove from pan.

Using the same pan, add sauce ingredients (sake, mirin, soy sauce, dashi granules) and simmer on low heat while stirring until thickened.

Plate the patties, pour the sauce over them, and garnish with chopped green onion.
