    • 🍅 200g canned tomatoes
    • 🧂 1/3 tsp salt
    • Pinch of pepper

    • 💧 100ml water
  • Herbs

Peel and chop potatoes into bite-sized pieces. Soak in water for 5 minutes, then drain. Microwave for 4 minutes at 600W.

Trim the base of shimeji mushrooms and separate them by hand. Mince the garlic.

Clean the squid by removing the innards and cartilage. Slice the body into 1cm rings and cut the tentacles into bite-sized pieces.

Heat olive oil in a pot and sauté garlic until fragrant. Add squid and stir-fry briefly over medium heat.

Add potatoes, shimeji mushrooms, canned tomatoes, salt, pepper, and water. Bring to a boil, then simmer for 7 minutes until potatoes are tender.

Serve in bowls and garnish with dried parsley.
