Main
- 🐟 2 fillets of fresh salmon
- 🍄 1 pack of shimeji mushrooms
- 🧂 A pinch of salt and pepper
Cooking Oil
- 1/2 tbsp salad oil
Toppings
- 🧀 A handful of pizza cheese
- Chopped parsley as needed
Miso Mayo
- 2 tbsp mayonnaise
- 2 tsp miso

Trim the root of the shimeji mushrooms and separate them. Season the salmon fillets with salt and pepper.
In a bowl, mix mayonnaise and miso to create the miso mayo sauce.
Heat salad oil in a frying pan over medium heat. Place the salmon skin-side down and cook until browned, then flip.
Add the shimeji mushrooms around the salmon and stir-fry. After 2 minutes, flip the salmon so the flesh side is up.
Spread the miso mayo and pizza cheese evenly over the salmon. Cover with a lid and steam on low heat until the cheese melts. Garnish with parsley.
