- 🐟 2 fillets of fresh salmon
- 🍆 1 eggplant
- 🧂 Salt to taste
- A pinch of pepper
- Salad oil as needed
- Flour as needed
Tomato Yuzu Sauce
- 🍅 1 tomato
- 1 tbsp olive oil
- 1 tsp yuzu kosho

Season the salmon fillets with salt and pepper. Coat them lightly with flour.
Heat salad oil in a pan and sauté the salmon fillets until golden brown on both sides.
Slice the eggplant into rounds and sauté in the same pan until tender.
Prepare the tomato yuzu sauce by dicing the tomato and mixing it with olive oil and yuzu kosho.
Plate the sautéed salmon and eggplant, then drizzle the tomato yuzu sauce on top.
