    • 🥔 400g daikon radish
    • Leaves from 400g daikon
  • Seasoning

    • 🧂 1/3 tsp salt
    • 💧 200cc water
    • 2 tbsp mirin
    • 1 tbsp sake
    • 2 slices ginger
    • 60g salt koji

Sprinkle salt on salmon and let sit for 5 minutes. Pat dry and cut into bite-sized pieces.

Cut daikon into 2cm slices and halve them. Peel the skin and cut daikon leaves finely.

Place daikon in a pot with enough water to cover. Bring to a boil, cover, and simmer on low heat for 10 minutes. Drain water.

Return daikon to the pot, add seasoning ingredients (water, mirin, sake, ginger, salt koji) and mix. Add salmon, cover with a drop lid, and bring to a boil. Simmer on low heat for 15 minutes, then add daikon leaves and cook briefly.
