    • 1.5 tbsp mirin
    • 🧂 1/3 tsp salt
    • 1/2 tbsp soy sauce
    • 💧 400ml water
  • Condiments

    • 🧅 Chopped green onion, as needed
    • Shichimi chili powder, as needed
    • Yuzu kosho, as needed

Remove the vein from the shrimp. Sprinkle salt on the cod, let sit for 5 minutes, rinse, pat dry, and cut into bite-sized pieces. Wash and drain the oysters.

Cut the cabbage into bite-sized pieces. Slice the green onion diagonally. Remove the stems from the shiitake mushrooms and make cross cuts. Slice the carrot into 5mm thick rounds.

Add the broth ingredients (sake, mirin, salt, soy sauce, water) to a pot and heat over medium heat. Once boiling, add the seafood and vegetables, cover, and simmer for about 5 minutes until cooked.

Serve in individual bowls and garnish with condiments like chopped green onion, shichimi chili powder, or yuzu kosho as desired.
