- 🐟 150g mackerel fillet
Seasoning
- 🍬 2 tbsp sugar
- 🧂 1 tsp salt
- sufficient vinegar for marination
Side

- sufficient wasabi

Coat the mackerel fillet evenly with sugar, wrap it in plastic wrap, and refrigerate for about 1 hour.
Wash the mackerel thoroughly, pat it dry, sprinkle salt evenly, wrap it again, and refrigerate for another hour.
Wash the mackerel again, pat it dry, place it in a zippered storage bag, pour enough vinegar to submerge the fillet, seal the bag, and refrigerate for 1 hour.
Peel off the skin, slice the mackerel into bite-sized pieces, and serve with rehydrated wakame and a side of wasabi.
