Protein
- 🍗 1 piece (300g) chicken breast
Vegetables
- 10 shiso leaves
Condiments
- 15g salted kombu
- 1/2 tbsp sesame oil
Starch
- 3 tbsp potato starch
Cooking Oil
- 2 tbsp salad oil

Cut the chicken breast into three sections along the grain, then slice diagonally into bite-sized pieces.
In a frying pan, combine chicken, salted kombu, and sesame oil, and massage together. Remove the stems from the shiso leaves, tear them into pieces, and mix lightly with the chicken. Add potato starch and coat evenly. Arrange the pieces without overlapping.
Add salad oil to the gaps in the frying pan and heat over medium heat for about 1 minute. Cook the chicken, flipping occasionally, for 6–7 minutes until crispy and cooked through.
