    • 40g yellow bell pepper

Remove the shells from the shrimp, leaving the tails intact. Devein the shrimp, rub with sake, and pat dry with kitchen paper. Make several cuts on the belly side.

Cut the spring roll wrappers in half. Quarter the cherry tomatoes and thinly slice the bell peppers.

Place one shrimp and one basil leaf on a spring roll wrapper. Roll tightly and seal the end with a flour-water mixture. Repeat for all 8 rolls.

Heat about 1cm of salad oil in a frying pan over medium heat. Fry the rolls until golden brown on both sides. Arrange the rolls and garnishes alternately on a plate for presentation.
